Heart-Healthy Apricot Muffins

Ingredients:
| 1 pound | All-purpose flour |
| 5 ounces | Soy flour |
| 6 ounces | Granulated sugar |
| 1 1/2 tablespoons | Baking powder |
| 2 1/2 teaspoons | Ground cinnamon |
| 3/4 teaspoon | Ground nutmeg |
| 1/4 teaspoon | Salt |
| 3 | Eggs |
| 1 1/4 cups | Soymilk |
| 1 1/4 cups | Water |
| 2 1/2 tablespoons | Soybean oil |
| 11 ounces | Pineapple, crushed, canned |
| 5 ounces | Dried apricots, diced |
Instructions:
Combine flours, sugar, baking powder, spices and salt; mix well.
Make a well in center of dry ingredient mixture and add eggs, soymilk, water, oil, pineapple and apricots; mix only until moistened.
Spoon mixture into oiled muffin tins.
Bake at 400º F for 12 to 15 minutes, or until wooden pick inserted near center comes out clean.
